Thanks so much for the lovely Deidre for hosting me. Since it’s post Thanksgiving and Christmas, I know after I’ve been eating all the rich traditional food I like to mix things up a bit.
Last Sunday I gave you my super easy taco seasoning recipe that will make you never go back to the jar or packet again. Today I give you my super yummy oven chimichanga recipe that you can use the taco seasoning in or stick to the recipe below. These are filling and will warm you up in the New Year.Ingredients:
2 Tablespoons unsalted butter
4 Tablespoons vegetable oil
1 onion, chopped
3 cloves garlic, chopped
1-2 Tablespoons chopped fresh or canned jalapenos (to taste)
Half a small can of green chilis
1 ½ teaspoons chili powder
½ teaspoon ground cumin
¼ teaspoon cayenne powder
¼ teaspoon ground cinnamon
1 teaspoon Kosher salt
1 small tomato, chopped
2 Tablespoons chopped fresh cilantro
2 ½ cups shredded rotisserie chicken
¼ cup sour cream
4 10-inch flour tortillas
1 cup shredded cheese, plus more for topping
Shredded lettuce, for toppingDirections:
- Preheat the oven to 450 degrees. Melt the butter with 2 tablespoons vegetable oil in a skillet, transfer to a bowl. Heat the remaining 2 tablespoons oil in the skillet. Add the onion, garlic, jalapeno and green chili and cook until soft, about 3 minutes. Add the chili powder, cumin, cinnamon, cayenne and salt; toast 30 seconds. Add the tomato and cilantro and cook until slightly dry, about 2 minutes. Sir in the chicken and sour cream and warm through. Remove from the heat.
- Spread 1 cup chicken mixture and ¼ cup cheese down the center of each tortilla, leaving a 2-inch border on both ends. Fold in the ends and roll up tightly.
- Put the chimichangas seam-side down on the baking sheet; brush with the butter-oil mixture. Bake 8-10 minutes per side, brushing again after you flip. When done, top with salsa, cheese, lettuce and tomato. Serve with rice or beans or your favorite side.

His slow, wicked smile made her stomach flip and heat flood her skin. “You want me? You got me.”
Slowly he spun her in a circle, her back resting against the front of his body. His hands settled on her hips, squeezing gently as he nuzzled her ear. His fingers pulled the fabric of her dress taut against her nipples as the delicious friction intensified with every move. She bit back a low moan at the sensation.
“This is me. This is how I really dance.”
Shivering at the feel of his warm breath against her ear, she closed her eyes and let her body go loose, relaxing as she moved with the beat of the music. His hands smoothed up and down her sides, teasingly light as he moved with her, not guiding but simply moving with her.
Through the thin fabric of her dress and his shirt and suit pants, heat from his body added to the sweat that beaded on her skin. She could feel his hardness pressing against her ass when she rocked back into him, though he let her lead all their movement. The club had gotten more crowded as they’d danced. The look on his face when she glanced up at him was one of hunger, his heavy-lidded eyes gone dark, illuminated by the flash of the strobe light. With the top buttons of his shirt undone, he looked as though he’d just been dragged off the floor and ravished.
Paige wanted to be the reason he looked that way.
